
Gorditas de Queso con Chicharr贸n 馃馃尞馃惙
Ingredients:
For the Gorditas:
- 2 cups masa harina (corn flour)
- 1 1/4 cups warm water
- 1/2 tsp salt
- 1/2 cup crumbled or shredded queso fresco (or any melty cheese like Oaxaca or mozzarella)
- Oil for frying
For the Chicharr贸n Filling:
- 1 lb pork chicharr贸n (fried pork skin or pork rinds)
- 2 Roma tomatoes, diced
- 1/2 small onion, chopped
- 1 garlic clove, minced
- 1/2 cup salsa verde (or store-bought)
- Salt and pepper to taste
- 1 tbsp vegetable oil
Directions:
Prepare the Chicharr贸n Filling:
- Cook the Vegetables:
- Heat 1 tbsp of vegetable oil in a skillet over medium heat.
- Add the chopped onion and garlic, and saut茅 until soft, about 3 minutes.
- Add Tomatoes and Salsa:
- Add the diced tomatoes and cook for another 2-3 minutes until they soften.
- Pour in the salsa verde and bring the mixture to a simmer.
- Add Chicharr贸n:
- Add the chicharr贸n to the skillet and stir to coat it in the salsa mixture.
- Cook for about 5-7 minutes, allowing the chicharr贸n to absorb the flavors.
- Season with salt and pepper to taste.
- Set aside.
Prepare the Gorditas:
- Make the Masa Dough:
- In a large bowl, mix the masa harina, warm water, and salt until you form a soft dough.
- If the dough is too dry, add a little more water, 1 tablespoon at a time. If it鈥檚 too sticky, add a little more masa harina.
- Shape the Gorditas:
- Divide the dough into small balls (about the size of a golf ball).
- Flatten each ball into a thick disc (about 4 inches in diameter).
- Make a small indent in the center and add some crumbled queso fresco.
- Fry the Gorditas:
- Heat about 1/2 inch of oil in a large skillet over medium-high heat.
- Fry each gordita for about 2-3 minutes on each side until golden and crispy.
- Remove from the oil and drain on paper towels.
- Split and Fill:
- Once the gorditas are cool enough to handle, carefully cut a slit in the side of each gordita to create a pocket.
- Stuff each gordita with the chicharr贸n filling.
Serve:
- Serve the Gorditas de Queso con Chicharr贸n hot, topped with salsa, fresh cilantro, and a squeeze of lime for extra flavor.
