Ingredients

For the Stew

  • 1 head of garlic, peeled and crushed
  • 1 teaspoon ground cumin
  • 1 tablespoon dried Mexican oregano
  • 1 can hominy, drained

  • 1 shredded cabbage
  • 1 onion, peeled and chopped
  • 1 bunch cilantro, chopped
  • 2 bunches radishes, thinly sliced
  • Limes, cut into wedges
  • Tostadas

Instructions

  1. Prepare the Pork Broth
    • Place the pork pieces in a large pot with 5 quarts of water. Bring it to a boil, skimming off any foam that rises to the surface.
    • Once the broth is clear, add the garlic, quartered onion, bay leaves, and 2 tablespoons of salt.
    • Reduce the heat, cover, and let it simmer for 1 to 1½ hours. Check occasionally to ensure the water level stays around 4 quarts, adding more water if needed.
  2. Prepare the Chile Sauce
    • Remove the stems and seeds from the guajillo chilies.
    • Soak the chilies in 2 cups of warm water for about 30 minutes, or until they are softened.
    • Blend the softened chilies with the soaking liquid until smooth.
    • Strain the mixture through a fine mesh sieve to remove any solids, reserving the liquid.
  3. Combine the Pozole
    • Add the strained chile sauce to the pot with the simmering pork. Discard the solids left in the sieve.
    • Stir in the cumin, oregano, and drained hominy.
    • Cover and simmer for an additional 1 to 1½ hours, or until the pork is tender and the flavors are well combined.
  4. Season and Serve
    • Taste the pozole and add more salt as needed.
    • Serve hot with a variety of fresh toppings, including shredded cabbage, chopped onion, cilantro, sliced radishes, lime wedges, and tostadas.
