Ingredients
For the Stew
- 6 pounds pork (a mix of pork trotters, pork shoulder cubes, and neck bones)
- 1 onion, peeled and quartered
- 5 quarts water
- 8 ounces dried guajillo chilies
- 2 bay leaves
- 1 head of garlic, peeled and crushed
- 1 teaspoon ground cumin
- 1 tablespoon dried Mexican oregano
- 1 can hominy, drained
For the Toppings
- 1 shredded cabbage
- 1 onion, peeled and chopped
- 1 bunch cilantro, chopped
- 2 bunches radishes, thinly sliced
- Limes, cut into wedges
- Tostadas
Instructions
- Prepare the Pork Broth
- Place the pork pieces in a large pot with 5 quarts of water. Bring it to a boil, skimming off any foam that rises to the surface.
- Once the broth is clear, add the garlic, quartered onion, bay leaves, and 2 tablespoons of salt.
- Reduce the heat, cover, and let it simmer for 1 to 1½ hours. Check occasionally to ensure the water level stays around 4 quarts, adding more water if needed.
- Prepare the Chile Sauce
- Remove the stems and seeds from the guajillo chilies.
- Soak the chilies in 2 cups of warm water for about 30 minutes, or until they are softened.
- Blend the softened chilies with the soaking liquid until smooth.
- Strain the mixture through a fine mesh sieve to remove any solids, reserving the liquid.
- Combine the Pozole
- Add the strained chile sauce to the pot with the simmering pork. Discard the solids left in the sieve.
- Stir in the cumin, oregano, and drained hominy.
- Cover and simmer for an additional 1 to 1½ hours, or until the pork is tender and the flavors are well combined.
- Season and Serve
- Taste the pozole and add more salt as needed.
- Serve hot with a variety of fresh toppings, including shredded cabbage, chopped onion, cilantro, sliced radishes, lime wedges, and tostadas.
