Salsa de Molcajete Picosa 🌶️🔥


Ingredients:

  • 4 tomatoes
  • 7 serranos
  • 1 chile manzano
  • 3 jalapeños
  • 3 garlic cloves
  • 1/8 piece of yellow onion
  • Kosher salt, to taste

Directions:

1. Roast or Char the Ingredients:

  1. Roast or char the tomatoes, serranos, chile manzano, jalapeños, garlic, and onion on a comal or griddle.
  2. Be sure not to burn the garlic, as it can make the salsa bitter.
  3. Let everything soften and develop a nice char.

2. Grind the Garlic and Onion:

  1. Once everything is roasted, place the garlic and onion in a molcajete (mortar and pestle) and grind them well.

3. Add the Chiles:

  1. Next, add the serranos, chile manzano, and jalapeños to the molcajete.
  2. Grind them into the mixture until well combined.

4. Mash the Tomatoes:

  1. Add the roasted tomatoes to the molcajete.
  2. Mash everything together until well combined and the desired texture is achieved.

5. Season and Adjust Consistency:

  1. Add salt to taste.
  2. If the salsa is too thick, add a couple of tablespoons of water to reach your desired consistency.

6. Serve:

  1. Your Salsa de Molcajete Picosa is ready!
  2. Serve it with tacos, grilled meats, or your favorite dishes.

Note: If you don’t have a molcajete, you can use a blender to blend everything together. However, a molcajete gives it a more authentic, rustic texture and flavor.
