Ingredients:

  • 1 pound tomatillos, cored and roughly chopped
  • 1 1/4 cups onions, roughly chopped
  • 4 garlic cloves
  • 4 green onions, roots removed
  • 2 teaspoons Mexican oregano
  • 1 1/4 cups cilantro leaves, chopped
  • 1/4 cup green New Mexico Hatch chile powder
  • 1/2 fluid ounce extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 20 corn tortillas
  • 2 cups neutral frying oil
  • 4 large eggs
  • 1/4 cup Cotija cheese, crumbled
  • 1/4 cup Mexican crema
  • Cilantro leaves, for garnish
  • Shaved radish, for garnish

Instructions:

Step 1: Roast the Vegetables

  • Preheat your broiler to high and line a sheet pan with aluminum foil.
  • Spread the tomatillos, onions, garlic, and green onions evenly on the pan.
  • Roast under the broiler, tossing occasionally, until softened and lightly charred.

Step 2: Prepare the Green Chile Sauce

  • Transfer the roasted vegetables to a blender.
  • Add oregano, cilantro, and Hatch chile powder. Blend until smooth, adding a splash of water if needed for consistency.
  • While blending, drizzle in the olive oil to emulsify.
  • Season with salt and pepper. Set aside.

Step 3: Fry the Tortillas

  • Heat 2 cups of neutral frying oil in a large skillet over medium-high heat.
  • Stack the tortillas and cut them into rectangles.
  • Test the oil by dipping a tortilla piece; if it sizzles, add the remaining tortilla pieces.
  • Fry until golden brown and crispy, then drain on paper towels.

Step 4: Simmer the Sauce and Chips

  • Discard all but 1 tablespoon of the frying oil from the skillet and return to medium-high heat.
  • Add the green chile sauce to the skillet, bringing it to a simmer for 2-3 minutes.
  • Toss the fried tortilla chips in the sauce until evenly coated. Transfer to serving dishes.

Step 5: Cook the Eggs

  • In a separate pan, fry the eggs to your desired doneness. Place one fried egg atop each portion of chilaquiles.

Step 6: Garnish and Serve

  • Drizzle Mexican crema over the chilaquiles, then sprinkle with Cotija cheese.
  • Add shaved radish and cilantro leaves for garnish.
