
Loaded Steak Quesadillas Recipe
Ingredients:
For the Quesadillas:
- 4 large flour tortillas
- 2 cups Mexican cheese blend
- 1/2 cup fire-roasted corn kernels (drained)
- 1/2 cup cherry tomatoes (thinly sliced)
- 1/2 cup black beans
- 1 small avocado (diced)
- Lime wedges and fresh minced cilantro (for garnish)
For the Steak:
- 1 lb (500 g) sirloin steak
- 1 tsp ancho chili powder
- 1/2 tsp paprika
- 1/4 tsp onion powder
- 1/4 tsp ground Mexican oregano
- 1/4 tsp sea salt
- 1/4 tsp cumin
- 1/4 tsp garlic powder
- 1/4 tsp cayenne pepper
Directions:
- Prepare the Oven:
- Preheat the oven to 450°F (230°C).
- Line a baking dish with parchment paper.
- Season the Steak:
- In a small bowl, mix the chili powder, paprika, onion powder, oregano, sea salt, cumin, garlic powder, and cayenne pepper.
- Generously rub the steak with the seasoning blend.
- Cook the Steak:
- Heat 2 tbsp of olive oil in a large skillet over medium-high heat.
- Sear the steak for about 3 minutes per side until nicely browned.
- Remove from heat and let the steak rest for 5 minutes.
- Assemble the Quesadillas:
- Lay 2 tortillas on the prepared baking dish.
- Sprinkle each tortilla with 1/2 cup of cheese.
- Evenly distribute the tomatoes, black beans, corn, and avocado on top of the cheese.
- Slice the Steak:
- Slice the rested steak thinly against the grain.
- Lay the steak slices evenly on top of the filled tortillas.
- Finish Assembling:
- Sprinkle the remaining cheese over the steak and toppings.
- Cover each with another tortilla to form the quesadillas.
- Bake:
- Bake in the preheated oven for 10 minutes, or until the cheese is melted and the tortillas are golden.
- Slice and Serve:
- Remove the quesadillas from the oven and let them cool for a minute.
- Slice into wedges and serve with lime wedges, sour cream, guacamole, and a sprinkle of fresh cilantro.
