Directions:

Step 1: Prepare the Broth
- In a large pot, combine 2-3 pounds beef shank or beef chuck, 10 cups water, 1 quartered onion, 3-4 minced garlic cloves, 2-3 bay leaves, and 1 teaspoon black peppercorns.
- Bring to a boil over high heat, then reduce the heat to low and simmer for 1.5 to 2 hours, skimming off any foam that rises to the surface.
- Cook until the beef is tender and easily pulls apart.
Step 2: Add the Vegetables
- Once the beef is tender, add 2 chopped carrots, 2-3 cubed potatoes, 2 cups corn, 1 chopped zucchini, and 1-2 cups chopped cabbage to the pot.
- Season with salt to taste.
- Simmer for another 30 minutes, or until the vegetables are cooked and tender.

- Before serving, remove the bay leaves from the soup.
